Beef with Mushrooms and Onions

This Beef with Onions and Mushrooms recipe is a staple of mine during busy weekdays. It is a very quick and easy recipe which only takes a few minutes on the stove. It can be made with any cut of beef you have, like, or can afford. This beef dish is versatile and can be eaten along side mashed potatoes and more veggies, a salad, with rice, in some tortillas, or in a nice crusty bun as a sandwich etc. It also reheats really well!   1. Cut your beef into half inch cubes and season with the Montreal steak spice, black pepper, chili flakes, adobo (all purpose seasoning), browning, vinegar, garlic, and throw your piece of cinnamon in there too. You can cook this immediately or allow it to marinate overnight.

  2. Heat a non-stick pan over medium-hight heat. Add in the olive oil followed by the seasoned beef.

  3. Allow to cook in its own juices for 3-4 minutes.

  4. Add in the ketchup and mushrooms. Allow the mushrooms to simmer in the beef juices and absorb and thicken the liquid. This will take about 2 minutes.

  5. Stir in the sliced onions and cook for 30seconds-1 minute. Remove from the pan/heat so the onions stop cooking and stay crisp. Enjoy!

Note

Beef:

Please use any cut of beef you have, like or can afford! As long as you don’t cook the beef too long the meat will be tender regardless. The only pieces I would stay away from would be meat from the shank or tail because those cuts require some braising. I would also stay away from anything labeled as “stewing” meat as these cuts also require slow, and lengthy cooking.

Mushrooms:

Use any kind of mushrooms you like! If you don’t like mushroom you can leave them out or replace them with another vegetable. Some replacements can be zucchini, bell peppers, eggplant, okra etc.

Cinnamon:

If you don’t have whole cinnamon you can use about 1/4 teaspoon of ground cinnamon or leave it out completely.
