Have you ever tried using mayo in marinades before? If not this easy chicken skewers recipe may be a great way for you to try! Each piece of chicken is hugged with warm Indian spices and flavors.

TIPS AND THINGS TO NOTE:

Soaking wooden/bamboo skewers

If you are using wooden/bamboo skewers it is helpful to soak them in water for about 30 mins- an hour to allow for the wood to become moist. The moisture will help prevent the wood from burning. Alternatively you can also use metal skewers.

Why use mayonnaise in marinades:

The mayo provides a richness and a nice coating to allow all the spices to adhere to the chicken. It also helps keep the chicken breast moist. Mayonnaise is great for all kinds of marinades especially for fish and seafood.

  1. Cut your chicken breasts up into 2×1 inch wide strips approximately a 1/4 inch thick. Slicing it this way allows you to weave the chicken onto the skewer.

  2. To your sliced chicken add the turmeric, garlic powder, onion powder, chili powder, paprika, curry powder, dry fenugreek leaves, lemon juice, mayo, and salt.

  3. Mix well and allow to marinate for 1 hour minimum or overnight.

  4.  Weave the pieces of chicken onto skewers. See notes if you are using wooden or bamboo skewers.

  5. Grill 3 minutes per side.

  6. Once both sides of the skewers have been grilled for 3 minutes per side, baste the top with butter or ghee and flip the skewer over. Allow to cook for an additional 2-3 minutes. Baste the 2nd side with butter, flip and allow that side to cook for 2-3 minutes as well (or until you feel it is cooked through). If you are using a quick read thermometer the internal temperature of the chicken should be a minimum of 165 degrees F.

  7.  If you have extra ghee or butter remaining give the chicken one last baste before sprinkling on some dry parsley or finely chopped cilantro. Enjoy!
