TIPS AND NOTES:
Pancake mix
I am using a buttermilk instant pancake mix. Any instant pancake mix works. In fact if you have a good home made pancake batter recipe you would prefer to use than that’s great too. Just make sure the batter is slightly thick and not runny (not like a crepe batter). This helps for it to stick to the chicken when you dip it in. If your pancake mix calls for milk, substitute it with water instead. This is because milk has sugars in it that will caramelize/burn the batter fast when frying. Your batter will with become dark and burn faster than your chicken will cook.
Dips and finishings:
I used maple syrup to dip these into but use what every sauce or syrup you like. Sometimes I like to mix my syrup with some hot sauce for some extra savouriness. Another thing I like to do is dust some powdered sugar on them! SO GOOD!
Heat:
These cook up super fast so keep your oil temp just below medium (a tiny notch below medium heat). I like this cut my strips thin to make sure they cook through on time with the batter.
Serving size:
2 people can enjoy this portion as an appetizer so multiply the recipe accordingly.

Cut the chicken breast into thin strips.

Season the chicken strips with all purpose seasoning/seasoning salt, garlic powder, and onion powder. Allow to marinate for 30 minutes.

Prepare your pancake mix using water.

Dip your chicken strips into the batter allowing the extra to drip off.

Fry in a neutral oil of choice until brown and cooked through (white all the way through- no pink) or until the internal temperature reaches a minimum of 165 degrees F. Keep your heat a tiny notch below medium heat.

Serve with your choice of syrup/sauce, or simple dust with powdered sugar and enjoy.
