Pork with Bell Peppers & Onions
This simple pork stir fry with bell peppers recipe is a quick and easy weekday dinner idea. If you don’t eat pork don’t worry- it can be swapped out for a variety of other proteins as well! It comes together in a few minutes which makes it perfect for when you have to cook something fast. Enjoy this dish with some steamed rice, a salad or in some tortillas for great pork tacos. Season the pork with Sazon, salt, minced garlic, cumin seeds and lime juice. You can cook this immediately or marinate it overnight.

To a pan over medium heat add the olive oil and seasoned pork.

Stir fry occasionally until half way cooked (about 4-5 minutes depending on the size of the meat cubes).

Once half way cooked add in the chili powder and ketchup. Stir and allow the meat to cook through in its own juices.

A minute before you think the pork is cooked through add in your bell peppers and onions and stir. Cook for 1 minute so the veggies remain a bit crisp and enjoy!
Note
- Pork: Use what ever cut of pork you have or enjoy. I am using 3 pork chops for this recipe that I have removed from the bone and cut into chunks/cubes.
- Pork substitutes: Shrimp, fresh tuna, chicken, beef, and lamb are all great substitutes for the pork in this recipe. For a vegetarian option you can use paneer or cauliflower.
