This is an all time family favourite recipe! Made with just a few ingredients and has lip smacking goodness! This is how to cook corn on the cob!! My mom use to make this without the butter but you know I had to throw some into my version.. hehe. Similar versions of this corn recipe is made in various countries around the world and they each have their own little spin on it. Our family barbecues are not the same if we don’t throw some of these on the grill. Enjoy!
Buttery Chili Lime Corn on the Cob
TIPS AND THINGS TO NOTE:
Corn Husks:
I like to keep the husk pulled back and the stem intact like in the pictures and video. If your corn does not have a husk or stem no problem. Its really there as a handle which makes it easy to turn the corn on the grill and to gives you something to hold onto as you are eating. It also gives a nice rustic look that I personally enjoy.
Spice Tolerance and adjustments:
If your can’t handle too much heat use less cayenne pepper/chili powder. You can also leave it out completely and substitute it with paprika.

Grill your corn until slightly charred on all its sides. You want your grill to be on medium-high heat.

To a heat proof dish add in the butter, chili powder, garlic powder, salt, and lime juice. Allow to melt on the grill or microwave for about 30 seconds.

Use your reserves lime peel halves to brush on your butter baste and squeeze the peel as you rub it on the corn to get a more intense lime taste. You could also use a brush.

Allow for the spices to toast on all sides (approximately 30 seconds a side). Enjoy!
