Pomegranate Rice in 40 minutes

Amount of pomegranate and when to add it:

Add more of less of the recommended amount of pomegranate arils that this recipe requires based on your preference. If you really love pomegranate it will not hurt to add extra! YUMMY!

I also like to wait until the rice slightly cools before stirring in the pomegranate and coriander/cilantro.

Soup Cube:

You can use any soup cube you have and enjoy. I would recommend either chicken or vegetable. You can also use the powder form.

  1. Add the butter or ghee to a pot over medium heat.

  2. To the melted butter or ghee add in the cumin seeds, onion and garlic. Stir occasionally until lightly brown.

  3. Add in the turmeric and soup cube. Stir the ingredients until the soup cube melts.

  4. Add in your washed rice and water and stir.

  5. Allow the water to come to a full boil before lowering the heat to low and putting a lid on the pot. Cook for 20 minutes or until the water is absorbed.

  6. Remove lid and fluff rice with a fork. Put lid back on your pot and turn off your heat. Allow to sit for 10 more minutes.

  7. Remove the lid and allow the rice to cool slightly (approximately 10 minutes) before adding in the pomegranate arils and chopped cilantro. Fluff everything together gently.

  8. Finish with chopped pistachios and enjoy!
