Roasted Red Pepper and Corn Salsa

TIPS AND THINGS TO NOTE:

Corn:

Please try and find sweet corn for this recipe. You can roast the corn on the grill yourself and cut them the kernels off the cob like I have done.. or you can use frozen sweet corn kernels- thaw them- and toast in a hot non stick pan until slightly browned/charred. Please do not use canned corn for this- the additives in the brine change the taste and freshness of the dish.

Roasted Red Peppers:

I am using roasted red peppers from a jar in this recipe. I like to dry them well on a paper towel before dicing into small pieces. You can of course roast the red peppers yourself as well!

  1. Grill/roast your corn cobs over high heat for 2-3 minutes per side (see my notes for substitute options). Allow to cool before next step.

     

  2. Cut cooled corn off the cob- I use an upside down small bowl inside a larger bowl and use a sharp knife to cut between the corn kernels and husk. Make sure not to cut too close along the husk or you will get those annoying hard end pieces of corn which end up stuck in your teeth! UGH!

  3. To your corn kernels add in your diced roasted red peppers, red onion, cilantro, jalapeno, salt and lime juice.

  4. Combine well.
